Sparkling water
The Ezo deer, raised in the great nature of Shiranuka Town, Hokkaido, without stress, was hunted by female hunter Matsuno. The meat is very tender, and due to quick processing, there is no gamey smell, only the aroma of high-quality game. The deer, cooked slowly at low temperatures, is incredibly tender, allowing you to enjoy the rich flavor of the red meat directly. The sauce is a red wine sauce enhanced with black pepper, which pairs perfectly with the deer, bringing out its deliciousness. *The recommended serving size is 80g per person.
The burrata cheese from Italy's Gioiella has a thin skin that wraps rich cream, and when paired with ripe mango from Miyazaki, it tastes like a high-quality lassi. Adding prosciutto makes this dish a perfect match for wine.
A dish featuring clams, which is a specialty of the chef. This plate includes the largest size of clams that arrive at Toyosu, braised with high-quality clam broth along with white asparagus. The rich umami of the clams and the white asparagus soaked in the clam broth make this a unique dish that is characteristic of Shushu.
The famous Mortadella sausage from the Jura region of France cannot be imported, so we made it homemade using wild boar and deer meat from Shimane. It has the aroma of game but no unpleasant smell, making it perfect to accompany wine. It is served as a salad with cheese cut like flower petals from the Jura region, called Tête de Moine, along with fried gnocchi and seasonal asparagus.
