We layered the overflowing umami of the famous Wakayama brand 'Yamari Shirasu' with avocado and hon maguro tataki. This is an experiential dish that you can enjoy by breaking the egg yolk and wrapping it in Korean seaweed!
Asparagus from Iizuka Farm in Niigata Sanjo, grown lushly with snowmelt water, and the high-end summer ingredient 'Tokishirazu' (seasonal salmon) simply sautéed in butter! The natural sweetness and richness of the ingredients spread throughout your mouth!
