At our restaurant, we use 'Eichan Tomato' cultivated by the chef's brother in Shimoda, Izu. Grown in terraced fields that receive plenty of sunlight and have good drainage, it features a unique flavor that is concentrated and unlike any other. The tomato menu changes daily. Look forward to it!
