A hideaway restaurant in Ginza 8-chome. Located on the first basement floor, the restaurant has a chic, authentic, and cozy atmosphere. Ingredients for our dishes are carefully selected according to the season and the place of origin. We always have more than 100 kinds of German wines on hand, and we are able to provide you with wines to match your meal. Please enjoy German wines and seasonal ingredients that are still unknown to you.
We have prepared 4 kinds of German wine. The wines will be served in order, just like a meal course. In recent years, German wines have been attracting attention from all over the world. The vegetables grown using pesticide-free farming methods are sent directly from the producers. They are fresh and have the original taste of the vegetables. Vegetables grown without pesticides are gentle on the body and provide peace of mind and safety.

Known as ancient wheat, Dinkel wheat is referred to as farro in Spain and is often served in risottos. At our restaurant, we serve it as a salad combined with seasonal vegetable puree. In Germany, it is valued as a health food and is famous for being three times more nutritious than regular wheat.

The fragrance of herbs creates a perfect harmony with the lamb. It pairs well with slightly sweet white wine. The lamb, finished with low-temperature cooking, retains its umami, resulting in a tender and juicy flavor.
This is a duck raised for the production of foie gras. Its tender meat pairs exceptionally well with a sauce inspired by the Black Forest.
Black Angus beef directly shipped from Hokkaido Naito Angus Farm. Due to the limited shipment of only 6 heads per year, this beef is highly rare. With a growth period of 24 months, it is young, has no excess fat, and offers tender meat quality. The producer raises the cattle with heartfelt care. The Weingut SALWEY began when the SALWEY family, who immigrated from Switzerland in the 17th century, started cultivating wine. The current Salwey was established in 1950. In Oberrotweiler (the name of the vineyard) in Baden, exceptional Spätburgunder and Grauburgunder are frequently produced, and high-quality Riesling is often made in Glottertaler Eichberg. The volcanic soil contributes to the powerful, rich, and mineral-laden wines that characterize Salwey. The Franconia region has been famous since the Middle Ages as a place that produces dry white wine in Germany. When Reinhold and Cornelia Schneider established their winery in 1981, they were determined to produce dry wines and engage in continuous grape cultivation. At that time, according to Schneider, his wines did not necessarily meet the 'Official Tasting Panel' standards. As a result, some of the wines he produced were only treated as low-quality table wines. However, consumers did not mind this, and they did not have a problem with the absence of the vineyard's location name on the label. Instead, today, the labels feature terms that indicate the soil of the wine's origin.
