In a quiet shop located in the basement of a building, the calm lighting and the flames of the fire create a wonderful atmosphere. The space is centered around the counter, allowing for an immersive cooking experience that is enjoyable to watch. The origins of the ingredients are carefully indicated, conveying a respect for the materials used. The bonito has a gentle aroma of firewood, with a crispy skin and moist flesh that left me impressed. The cooking of the meat dishes is also skillful, with the black-haired wagyu's sirloin having a refined aroma and a light mouthfeel. The comforting rice and miso soup at the end provide a sense of relief, and the overall satisfaction, including the pairing of the dishes with wine, is very high.
