We use freshly laid eggs from Boris Brown chickens, which are lovingly raised in the former Obara village in Toyota City, Aichi Prefecture. They are characterized by their rich flavor. Additionally, we use a special dashi made from bonito and kelp that complements the eggs. The dish is finished with a refined taste and aroma. The umami of the charcoal-grilled eel, the umami of the dashi, and the umami of the eggs overlap in layers, creating a synergistic flavor effect. This is our recommended dish.

■ We uniquely blend Hokkaido's Yume Pirika and Akita's Akita Komachi rice to match with eel and sauce, cooking it slightly firmer. ■ We use brand eel from Mikawa Isshiki, which has a history of over 100 years of aquaculture. It has a flavor that rivals that of natural eel, using clear water from the Yahagi River system. Additionally, the secret to its deliciousness is that we prepare the eel alive in the shop and grill it over strong binchotan charcoal.
■ The aroma and flavor of freshly ground sansho pepper are the best. To allow you to experience its wonderful qualities, we offer dried sansho pepper. We also pay attention to the origin, providing fully ripened red sansho from Hida in Gifu Prefecture and Asakura sansho from Okuizumo in Shimane Prefecture. Please enjoy the differences. ■ Since our establishment in 1958, we have been using a traditional sauce that has been uniquely improved and passed down from the previous generation.
