Iga beef is a brand of beef that possesses a rich aroma and depth of flavor, as well as a melt-in-your-mouth tenderness, thanks to the clear streams from the Nunobiki mountain range and the seasonal temperature differences unique to the Iga basin in Mie Prefecture. It is produced from unbred female black-haired Japanese cattle that are raised and managed by members of the Iga Beef Production Promotion Council, and these cattle are raised for over 12 months in the Iga basin before being shipped for meat. Only cattle that meet these criteria are sold under the name 'Iga Beef.' Due to its limited production and distribution primarily in Iga and nearby areas, it is also referred to as 'phantom meat.' Imabari in Ehime Prefecture is Japan's number one yakitori city. There are many yakitori shops, but the unique style of grilling using a teppan is a characteristic feature. Charcoal grilling removes excess fat from the meat, resulting in a light flavor, but Imabari yaki adds elements of steaming and frying, which allows the meat to cook quickly and enhances its umami. Please be sure to try it at least once. If you come to Fukumi, make sure to eat it!
