The clear soup is transparent, and you can feel the umami from the very first sip. The thin noodles have just the right amount of firmness and slide down smoothly, providing a pleasant sensation. The low-temperature cooked chashu is tender like prosciutto, and the sweetness of the meat spreads as you chew. The bowl of soup made with cheese and pork has a refined yet robust flavor that surprised me. The finishing touch of black pepper tightens everything up and enhances the aroma even further. You can feel the minimalist approach typical of Japanese cuisine, making it so delicious that you want to drink the soup until the very last drop.
