Hakata Jidori chicken, bred to make the best Mizutaki in Japan, is used. 200 Hakata Jidori chicken bones are slowly simmered in a cauldron for 5 hours to melt the flavor into the soup and give it a rich, concentrated, and deep taste. The firm texture of the meat and glutinous skin of Hakata Jidori chicken is, of course, rich in flavor, collagen and other good fats, and well-balanced nutrients, and the outstanding richness and abundant flavor will spread in your mouth.
