Our signature dish where you enjoy the loach in its entirety. It has a rich flavor and a crunchy texture from the bones. This is a simple hot pot made with just long green onions and loach. The loach is carefully prepared, making it tender and free of any odor.
Each live loach is carefully prepared at the shop, with the bones and head removed. Burdock is placed at the bottom, adding an enjoyable texture. This dojou nabe is recommended for first-timers as well.
In a shallow ceramic pot, deboned loach is arranged on top of burdock and bound with egg. The aroma that rises when the lid is opened stimulates the appetite.
