It is said that there are no parts of eel that are wasted, just like tuna. This skewer allows you to enjoy various parts of the eel, including the fatty belly, the firm back, the fins, and the rare liver.
A rare liver that can only be obtained from one eel, generously grilled on a skewer. Please enjoy it with a sauce that has been passed down for 70 years. Feel free to add soy sauce pickled with sansho pepper and wasabi to your liking.

Taittinger Brut Réserve (Dry)
Varieties: Sauvignon Blanc / Vermentino / Grenache Blanc Region: France, Languedoc The herbal aroma is refreshing and crisp. The flavor is well-balanced with fresh acidity reminiscent of citrus and lime, along with minerals and fruitiness.
Variety: Carignan Region: France, Languedoc. A smooth and mellow taste that seeps into the tongue. The balance of fine acidity and concentrated fruit flavors is excellent, providing a pleasant sensation that makes you want to keep drinking. The use of malolactic fermentation (a method of fermentation using lactic acid bacteria instead of yeast) and grapes from old vines (over 50 years old) results in a surprising smoothness that makes it hard to believe it is 100% Carignan.
Varieties: Macabeo, Xarel·lo, Parellada. Region: Spain, Catalonia. A genuine sparkling wine made using the same bottle fermentation method as Champagne. It has a crisp and refreshing taste with a rich body. It pairs very well with Japanese cuisine and can be enjoyed with all types of dishes.

Variety: Koshu Region: Yamanashi This is an unfiltered sparkling wine made using the same bottle fermentation method as the Champagne from Honbo Shuzo Yamanashi Mars Winery. The aromas of white flowers, citrus, and minerals are gently enveloped by the yeast scent, and the fine bubbles spread in the mouth. It is light and has a rich fullness and smooth richness derived from the yeast. The cloudiness is a characteristic of this wine. It pairs very well with Japanese cuisine and can be enjoyed with all types of dishes.
Variety: Koshu Region: Yamanashi A crisp and dry white wine that pairs well with Japanese cuisine. It goes well with grilled eel skewers, charcoal-grilled dishes, simmered dishes, and hot pot.
