Raft is a luxurious delicacy that requires cooking skill, in which open eels are grilled directly without being cut in half and arranged like a raft. In Kansai, eels are grilled directly without steaming. In the Kanto region, on the other hand, steamed eels are grilled, which requires a great deal of skill. At 88, skilled craftsmen carefully grill the eel, making this dish a reality.
In addition to the high-quality protein unique to fish, it also contains a wealth of vitamins that are generally lacking in fish products. Eel is rich in vitamin A, vitamins B1 and B2, vitamin D, and vitamin E, and it is also abundant in minerals such as zinc and calcium.
