Taimeshi is a local specialty dish that originated as a fisherman's meal and has been refined into a sophisticated Japanese dish. In a clay pot, meticulously prepared kombu and bonito dashi are combined, and the surface is lightly grilled to seal in the umami flavor. A whole natural sea bream from the Seto Inland Sea is cooked together with premium rice. The carefully crafted dashi and the rich flavor of the natural sea bream combine to create a delicate and exquisite taste that is unexpected from the hearty cooking method. In a clay pot, we carefully combine dashi made from kelp and bonito, lightly searing the surface to lock in the umami. We cook a whole natural sea bream from Setouchi with carefully selected rice. The thoughtfully crafted dashi and the rich flavor of the natural sea bream come together to create a delicate and high-quality taste that is unimaginable from the robust cooking method.
