Koumiya, a hand-made soba shop that has been beloved in Hamamatsucho for many years, has relocated to a back alley, offering a new charm. The soba, made from domestically sourced buckwheat ground in a stone mill, features a supple texture and a refreshing finish. This hidden gem allows you to savor seasonal dishes alongside fresh fish sourced daily from Toyosu Market, paired with carefully selected sake.

The interior is calm and small, making it comfortable. The soba noodles are elastic and have a pleasant chewiness, while the dipping sauce spreads the umami flavor of the broth smoothly. The cold noodles have a firm texture, and you can also choose warm noodles to enjoy based on your mood. The natto soba with a generous amount of toppings is delightful, and the separate egg yolk is a nice touch; mixing it creates an enjoyable texture. A bowl topped with sliced citrus looks refreshing and has a pleasant aroma. After the meal, you can slowly savor the rich and thick soba broth, which is plentiful and satisfying.

The interior is new and clean, creating a refreshing atmosphere that is very pleasant. The seating is mainly at tables, with many semi-private spaces that have partitions, allowing for a relaxed experience. The hand-made soba is thin and firm, and the coldness is refreshing and very enjoyable. The aroma of the broth is strong, and you can even enjoy the soba water after your meal. The tempura is generously portioned with both vegetables and seafood, and the anago (conger eel) in particular is fluffy and thick, providing a satisfying experience. The oyster rice is also impressive with its plump texture, and the combination with the soba is excellent.
