A new Nagoya specialty! (Within our company) Taiwanese mixed noodles are transformed into a salad so that it doesn't fill you up! Instead of noodles, we use bean sprout namul, creating a dish that feels like a salad snack. The most popular among the staff, using Okazaki Kaku-Q Haccho Miso. <What is Haccho Miso?> It is a long-aged soybean miso produced in Hachijo-cho, Okazaki City, Aichi Prefecture (formerly Hachijo Village). Made only with soybeans and salt, without using rice or barley koji, it is packed into wooden barrels and naturally fermented for 1.5 to over 2 years, with stones piled on top to prevent gaps, resulting in a unique bitterness and umami flavor. Compared to other soybean misos (red miso), it has a lower salt content. There are only two companies that produce Haccho Miso: Maruya Haccho Miso, derived from the Ota Yajiroemon family, and Kaku-Q, derived from the Hayakawa Kyuemon family.

An arrangement of Nagoya's specialty hitsumabushi with fragrant grilled chicken. Enjoy it in three different ways. Hitsumabushi is a dish where grilled eel is cut into pieces and placed on top of rice in a wooden container, and when eaten, it is served in a small bowl to be enjoyed. The name of the dish comes from the practice of mixing it in the container. There are various theories regarding its origin, but it is said that 'Atsuta Horaiken' used to serve eel rice in individual ceramic bowls, but due to the high number of deliveries, it was common for delivery staff to break empty bowls on their way back. Therefore, they started using larger, less breakable wooden containers (ohitsu) and serving multiple portions in those containers to share. <Delicious ways to enjoy Chicken Hitsumabushi> 1. First, divide the hitsumabushi in the ohitsu into four portions. 2. For the first serving, take one-fourth and enjoy it as is in a small bowl. 3. For the second serving, take another one-fourth and add condiments like wasabi or gari to enjoy a different flavor. 4. For the third serving, take one-fourth and pour dashi over it to enjoy it like ochazuke.
