■ Nakasho Shoten, a long-established wholesale dealer with over 90 years of experience in selecting unagi. With a long history and a track record of supplying many famous unagi restaurants, as well as operating its own restaurant, we are confident in our selection of ingredients. ■ The storage facility, known as Tateba, has been inherited from the past to preserve the unagi. The unagi, which has been purged of mud using well water, is made using water drawn from 200 meters underground to eliminate its unique odor. ■ The grilled Nakasho unagi is cooked without steaming, using high heat for a short time. The umami is sealed inside, while the outside is crispy and fragrant, and the inside is fluffy and juicy. Enjoy the delicate craftsmanship. ■ The sauce, Nakasho's secret sauce, has been passed down since the establishment and is used to coat the freshly grilled unagi. It creates an exceptional flavor where the fat and umami of the unagi blend together.
