This course is filled with the chef's ideas, attention to detail, and skill. Our speciality "Sea bream bouillabaisse" will be served. This course is limited to one couple per day to enjoy our signature dish, bouillabaisse! Early reservations are highly recommended! The risotto, which is the final dish with condensed flavor of many ingredients, is also an exquisite dish. Please try it for yourself! This course is a more luxurious version of our signature "Bouillabaisse" and is limited to one couple per day. A luxurious hot pot full of seafood served in a superb bouillabaisse broth prepared with a lot of time and effort! Lobster, crab, and other premium fish served in a bouillabaisse broth rich with the flavor of seafood are of course the most delicious, and the broth is further infused with the flavors of the ingredients. They enhance each other in the pot. The climax of the meal is the risotto, which is a superb dish that is worth eating! Please spend a blissful time. A plate of appetizers, a bouillabaisse (lobster, crab, and high-end fish), and a risotto to finish with bouillabaisse soup that is full of the flavor of the seafood (limited to the bouillabaisse course)

Crémant de Limoux is made from 60% Chardonnay, 25% Chenin, and 15% Pinot Noir. This winery was established by former Champagne producers in southern France, using the same traditional methods as Champagne to create high-quality sparkling wine. Only the first pressing of the juice is used, and after 20 months of bottle aging, it achieves a delicate and refined flavor.
Crémant de Bourgogne Blanc de Blancs / 100% Burgundy Chardonnay created by a world-renowned Japanese winemaker, known for its very fine and beautiful bubbles. The refreshing aroma of citrus fruits gradually increases in richness towards the finish, offering a depth and complexity of flavor. The elegant aftertaste, with nuances of beautiful white floral aromas, is particularly appealing.
Telmont Reserve Brut is made from 43% Chardonnay, 37% Pinot Meunier, and 20% Pinot Noir. The Maison Telmont has been dedicated to creating Champagne with a sincere approach to nature for four generations, guided by the principle of 'In the name of Mother Nature.' They emphasize sustainable Champagne production based on the concept of small-scale production using traditional methods by artisans. In 2022, the Oscar-winning actor Leonardo DiCaprio joined as a new investor, bringing significant attention to the brand. It features elegant bubbles with aromas of honeysuckle and subtle vanilla. The palate is rich with baked fruits, followed by plums and a hint of spice, eventually leading to candied tropical fruits and a crisp mineral finish.

Its high quality is recognized worldwide, and in 1884, it was appointed as a supplier to the British royal family. Additionally, their Champagne frequently appears in the iconic '007' film series, known as the favorite Champagne of the protagonist James Bond. The consistently uncompromising high-quality production results in an elegant Champagne that continues to captivate many. It features fine, high-quality bubbles, a gentle yeast aroma, and a slightly sweet scent reminiscent of warm sunlight. In contrast to the mild aroma, the taste offers a refreshing acidity reminiscent of lemon and orange, with a rich and expansive body. The finish is long, making it an elegant and satisfying Champagne.
Touraine Rose Sonnemot / Domaine Haut Perron / A dry rosé with the aroma of Loire Gamay cherries and a refreshing crispness, with a charming fruity finish of Gamay.
Vol de Nuit Rosé / Domaine Le Loup Bleu Grenache 77%, Rolle 14%, Syrah 5%, Clairette 4% with aromas of orange, peach, and pear, smooth and high-quality fruit flavor, a dry taste typical of Provence.
Bandol Rose / Domaines Ott is a dry rosé wine from the south of France, produced by Domaines Ott, known as the 'King of Rosé.' It is crafted from the finest fruit, offering a refined and high-quality taste. It pairs wonderfully with bouillabaisse and ratatouille.
Skin Contact / Mas del Perie / Cahors, Uni Blanc, Gros Manseng, Muscat d'Alexandrie with aromas of ripe quince, tropical fruits, and orange peel. Rich fruitiness with light tannins, a fresh mouthfeel, well-balanced, and an orange wine to enjoy casually.

It is a red wine from the excellent vintage of 2010, allowing you to fully enjoy the aging characteristics of Rhône wines.
