Please experience the genuine surprise and emotion recognized by meat professionals who have observed Saga beef for a long time.
This is the core part located near the center of the soft area that is even further inside than the inner thigh. It is a part of the thigh meat that is very tender and has a fine texture, with a balance of red meat and light marbling, making it soft and delicious.
This is meat that comes from the middle part of the rib. The sweetness of the meat and its moderate elasticity enhance its deliciousness. The balance of marbling and red meat is like a work of art, and it is a popular cut among women as various types of meat intersect. It is a very rare delicacy, with only about 1 kg obtainable from a single animal.
