The grapes from McLaren Vale are destemmed and crushed by foot in open tanks, undergoing natural fermentation with wild yeast for 15 days. They are pressed into old barrels and aged for 4 months. A red wine that beautifully expresses the iron notes, herbal sensations, and the charm of the grape variety in a clean yet modern natural style. ◼︎ Pigato 2022 Made under the philosophy that 'all quality comes from the vineyard', the grapes from the Clare Valley terroir are naturally fermented with wild yeast, with minimal SO2 addition and no fining or filtering, keeping human intervention to a minimum. It has a refreshing quality reminiscent of grapefruit and summer oranges, with a slightly bitter aroma from the skins. Non-filtered, no fining agents used. ◼︎ High Noon 2024 A winery that has been making waves in the Australian wine scene, 'Ricca Terra'. A light orange with a cloudy yellow color. A blend of three varieties from the same vineyard with 7 days of skin contact. Some is aged in oak barrels for 3-6 months. Non-filtered, no fining agents used. It evokes the refreshing sensation of citrus fruits with aromas and textures reminiscent of peach tea.
