The brewery is located on the coast of Shimajima in Amakusa, Kumamoto Prefecture, facing the mainland side of the island. Amakusa Shuzo Co., Ltd. was established as a shochu brewery in 1899. Amakusa Barley Shochu is made using barley koji and distilled through reduced pressure distillation. It has a fruity yet soft and gentle aroma, with a pleasant roasted barley scent and umami, resulting in a refreshing taste.
Obi, where the brewery is located, was a castle town of the Ito family with a production of 50,000 koku during the Edo period. Kodama Brewing is a small brewery with Junpei Tsuji as the toji (master brewer), brewing with his family and a few young brewery workers. It is made with 80% of the excellent sweet potato 'Kogane Senkan' and 20% of the 'Beni Imo' used by Junpei Tsuji. Enjoy the gentle aroma and soft sweetness of the sweet potato.
From the barrel that has been sleeping for many years in oak, we present the ultimate happy shochu, named after the 'owl,' which is said to invite fortune, protect household goods, and capture bright luck with wisdom. Please enjoy it as a friend to heal your fatigue at night. Owl, 25 degrees, is aged for 3 years in oak barrels.
Freshly dug sweet potato 'Kogane Senkan' processed on the same day, carefully brewed by a couple and their son through 83 steps. A mellow sweet potato shochu. Released in 1998, it quickly became well-known among shochu enthusiasts. A premium, limited production sake.
Located in the northern part of Miyazaki Prefecture, this small, newly established shochu brewery was founded in 2004 in Togotown, the birthplace of the poet Bokusui Wakayama. It uses contract-grown golden sweet potatoes and Kyushu-grown Koshihikari and Hinokikari rice as ingredients, producing a sweet potato shochu made with white koji. It is characterized by a subtle sweet potato aroma and a refreshing taste.

Founded in 1933, Iizutsu Winery has been dedicated to wine production in the Kikyogahara region of Shinshu for over 75 years. With a focus on grape cultivation and harvesting in the Kikyogahara area, the winery consistently manages the entire process from fermentation to bottling, pursuing the quality and value of locally rooted wines. Early on, the winery invested in the introduction of traditional European grape varieties, resulting in successful cultivation of several major varieties. Notably, the Merlot grapes from Kikyogahara have gained international recognition, winning awards at global competitions. This wine features a rich aroma of fruit from the European grape variety 'Merlot,' with gentle tannins and a harmonious body.
Okuzumo Vineyard produces grapes for processing using cultivation methods that are close to organic farming, without pesticides. The quality of the wine begins with a commitment to grape cultivation, particularly focusing on the methods of growing grapes. To create high-quality wine, it is essential to have fully ripe 'healthy fruit' without rot, which is typically achieved through thorough pest control measures such as pesticide application. However, by minimizing the use of pesticides, we emphasize cultivating crops in a natural way while also considering consumer safety. The Cabernet Sauvignon has a deep color after 14 months of long barrel aging, with aromas of chocolate, cassis, and blackberry. It is a medium-bodied wine with soft tannins.
Founded in 1937, this winery is rooted in Katsunuma and consistently handles everything from cultivation to brewing, continuing to challenge itself with the philosophy of 'Even if it's just one barrel, it must be the best.' Using the indigenous Japanese grape 'Koshu' and employing the sur lie method (slowly allowing the wine to contact the lees), they have created a dry wine that pairs well with food. It also pairs well with flavors that are considered difficult to match with wine, such as miso, soy sauce, and wasabi.
This is a slightly dry white wine made exclusively from Pinot Blanc grown in the Kamikawada area of Takahata Town, known for its organic farming. It has a youthful greenish hue and a refreshing aroma reminiscent of green apples. The wine is characterized by its rich acidity and crisp finish. It pairs well with Japanese cuisine, enhancing the delicate flavors of the ingredients.
Sakai Winery, founded in the 25th year of the Meiji era by founder Yasou Sakai, began planting grapes on Torikamisaka in Akayu and started producing wine, making it the oldest winery in Tohoku. Using grapes from Akayu in Nanyo City, we create a simple, non-filtered wine that is carefully aged using traditional methods, made by a family of four. It offers a pleasant floral aroma, pure fruit flavor, crisp acidity, and a fresh taste, allowing you to enjoy the Chardonnay as it is. Only 900 bottles are shipped from the winery.
In the Tsurunuma area of Urakawa Town, about 100 km northeast of Otaru, there is our own vineyard, 'Tsurunuma Winery.' The total area is 447 hectares, making it the largest scale for vinifera grape cultivation in Japan. What we cherish is the spirit of 'the land and the body are one.' In other words, we believe that wine made from grapes grown in the Japanese soil brings a sense of security and happiness to the Japanese people. Müller-Thurgau has a fragrant aroma derived from low-temperature fermentation and storage in stainless steel tanks. It has a fresh sweet scent reminiscent of melon and green apple, and when you swirl the glass to expose it to air, a refreshing citrus-like aroma also rises. The fragrance has a pure and clear impression like that of flowers.

Updated on 9/3. ■ The spring of Hokkaido has begun, and the 'hairy crab fishing' in the Okhotsk Sea after the drift ice has started! We procure the freshest and plumpest hairy crabs that were trapped in the drift ice in the nutrient-rich sea during winter. They are incredibly fresh, refreshing, and have a vivid umami flavor! They pair excellently with alcohol because they are so delicious! Now is the peak season from spring to summer!
