A completely transformative experience of the concept of beverages, the best experience of my life. Without a doubt, it was the most shocking drink I have ever tasted in my life. Not just delicious, but an experience of unknown flavors itself. The master's curiosity about taste is incredibly intense, and discussions about flavors and research are fascinating on another level. There is no unpleasant feeling at all; the demeanor is soft and polite, making you naturally want to hear more. You can feel from the conversation that they truly love making cocktails. Their love and passion for Kanazawa are strong, and the entire space is very comfortable. Since I am not good with alcohol, I ordered a mocktail themed on matcha bonbon chocolate. The moment I took a sip, I was blown away by the unbelievable deliciousness and a flavor I had never experienced before. The taste changes expression continuously, everything is meticulously calculated, truly a magical drink. My companion ordered a cocktail, and they said it was also so delicious that it left them speechless. I was so moved that I changed my plans during my two-day trip and revisited for two consecutive days. The second day was also overwhelming. It seems they have over 300 types of drinks in their mind that are not on the menu, constantly researching flavors and flexibly responding to requests. I learned the term mixology for the first time, but I deeply resonate with the idea of creating innovative drinks that prioritize deliciousness without being constrained by ingredients or techniques. Two mocktails in one hour, about 4000 yen. Honestly, this experience is too cheap for what it offers. Even those who cannot drink alcohol can truly enjoy it. If you go to Kanazawa, this is one place you absolutely cannot miss. I will definitely return to Kanazawa to taste this ultimate drink again. I strongly recommend it to anyone who wants to experience unknown flavors.

You can enjoy mixology cocktails made with ingredients from the Hokuriku region, as well as sake and Japanese tea.

Using sake 'Tengumai' from Ishikawa Prefecture, it is accompanied by Noto Sakura soy sauce, sake lees from Fukumikuniya, and Takagi koji miso powder at the three corners of the masu. You can also enjoy the changes in each flavor.
