A whole young chicken is stuffed with glutinous rice, garlic, chestnuts, jujubes, carrots, burdock, and other ingredients, and then simmered slowly. Torishin's Samgyetang was developed for Japanese-style banquet occasions. The jiggly soup brings cheers! The soup is also made by slowly simmering chicken bones, resulting in a flavor that is free of any peculiarities or odors, and is not monotonous.
This tsukune with cartilage is made in-house from ground meat that is irresistible with its juicy meat and chewy texture. The key is the combination of cuts and ratios used to create a tsukune that is both chewy and full of meat juice. Onions, miso, and other ingredients are added, and the mixture is kneaded well by hand before being grilled on a net. It has a satisfying bite similar to a large hamburger.
