Not sweet, yet not just tea, this is a completely new non-alcoholic drink designed specifically for pairing, aiming for the brilliance of the first sip. The restaurant's toast scene amplifies the anticipation for the dishes that follow, playing an important role in influencing that 'meal.' Flowery Lychee, as the name suggests, expresses a complex and dry flavor reminiscent of champagne, based on the vibrant aromas of jasmine and rose, combined with lychee juice. This is a confident creation that redefines the 'toast drink' from scratch, ensuring satisfaction for gourmands who cannot settle for alcohol-free options.
A completely caffeine-free and non-spice model overflowing with satisfaction, based on the juicy fruitiness of domestically produced white peaches, blended with rooibos tea that has a subtle astringency and richness, giving the body a gentle depth. Furthermore, rosehip adds a fruity acidity reminiscent of red fruits, tightening the overall profile, and finishing with the addition of orange peel and yuzu peel for a slight bitterness. The bitterness from the peel and the aroma of citrus essential oils serve as accents, guiding the balance that highlights the sweetness of the peach without overwhelming it. To illustrate its use, it occupies a position similar to a rosé, which is between white and red wine. It pairs well with a wide range of dishes for party scenes and special occasions, making it a bottle that can be enjoyed throughout the meal. Taste: When poured into a glass, the sweet aroma of white peach and the floral aroma of rooibos rise up, and the first sip reveals a layered spread of the thick sweetness of peach and the crisp acidity of rosehip. From the mid-palate, the bitterness derived from orange and yuzu peel adds a tightening effect to the sweetness, and the finish quietly continues with the richness of rooibos and a herbal aftertaste.
Fresh fruit × rare tea from Miyazaki, with citrus peel leading to an elegant aftertaste. The freshness of domestic apples is complemented by the rich flavor of yuzu, gently moderating the sweetness of the apples. Floral chamomile adds depth and complexity to the fruitiness. The soft acidity of yuzu juice and the carefully extracted bitterness from yuzu peel elevate the dish to a refined bitterness that pairs well with meals. It can be likened to a marmalade design, with the effects of citrus peel providing a moderate depth and aftertaste. Additionally, a rare tea from Miyazaki, known as 'Kamairicha', which accounts for less than 1% of green tea production, is blended in. The refreshing aroma of Kamairicha, roasted in a pan, gently connects the apple and yuzu, resetting the palate with a crisp astringency. Finally, a pinch of sun-dried salt from the Guérande region of France is added. The minerals sharpen the flavor profile, enhancing the overall richness while achieving a balanced taste that remains enjoyable. The taste is surprisingly harmonious with food, featuring the fresh sweetness of apples grown in Japan's rich soil, and the fluffy aroma of chamomile reminiscent of apples, complemented by the refreshing Kamairicha that tightens the contours with its roasted aroma and crisp astringency. To conclude, the warm acidity of yuzu juice spreads throughout the mouth, and the pleasant bitterness from the yuzu peel dissolves into a quiet, elegant aftertaste. It pairs well with ingredients similar to white wine and is a great match for delicate dishes such as salads, seafood, and steamed chicken. It also offers a surprising pairing experience with strong-flavored blue cheeses like Gorgonzola.
A vintage-level elegance created by high-quality wine grapes, black tea, and spices, featuring a rich aftertaste. The main ingredient is the black grape variety 'Cabernet Sauvignon,' known for its intense fruitiness and strong tannins. Additionally, the taste of the wine variety 'Syrah,' known for its peppery aroma, is recreated with blended black pepper and green Sichuan pepper as secondary ingredients. This product captures the best characteristics of various high-end wines. Furthermore, it achieves a complexity, depth, and aftertaste that cannot be reached with non-alcoholic beverages or grape juice, layering rich and robust acidity from cassis and high-quality aromatic astringency from black tea. The flavor combines the aromas of fruit and black tea, with spices following closely behind, featuring rich and flavorful black grapes harvested from Italian orchards and the sweet and sour fruitiness of cassis filling the mouth, accompanied by the complex and three-dimensional stimulation of spices reminiscent of wine aromas. The aftertaste reveals the splendid astringency and aroma of Darjeeling, the king of black tea. Enjoy a glass that offers a heaviness akin to aged wine. Pairing it with roasted red meat or spiced stews allows the astringency to cut through the fat, and the spice accents naturally lead to the next bite. Developed to aim for the satisfaction of a full-bodied red wine while being non-alcoholic, it allows guests who are moderating alcohol and wine enthusiasts to share the same 'exhilaration' at the table, which is its greatest appeal.
