Our soy sauce ramen uses [dried flying fish broth]. Carefully grilled one by one, domestic flying fish flakes are monitored closely to ensure they are grilled to the state where the umami and aroma of the fish are maximized before being soaked in soy sauce. The soy sauce used in our restaurant is a blend of several types from [Hoshi Brewing] in the town of Kurazukuri, Kitakata, combined with grilled flying fish and aged for several days to create our flying fish broth soy sauce (kaeshi). You can enjoy the rich, aromatic, and delicate flavor unique to grilled flying fish. While the typical characteristic of Kitakata ramen is medium-thick curly noodles, we use high-hydration noodles that have been aged using a unique method. These noodles have a high moisture content, providing a 'smooth and chewy texture,' are low in calories and healthy, yet have a substantial volume. You can choose between [aged high-hydration noodles] or [flat wide noodles] for a different texture experience.
