We carefully select high-quality seafood caught by local fishermen in the waters near Amakusa. Our skewers, luxuriously made with seasonal ingredients from Kumamoto Prefecture, feature a delicate and refined batter. Commonly known as 0 Shabu, this dish features fresh, high-grade horse sashimi from Kumamoto, served shabu-shabu style. The meat is sliced very thinly, similar to sashimi, so it is recommended to briefly dip it in kombu and bonito broth to avoid overcooking, and then enjoy it with a special ponzu sauce infused with yuzu. Due to the excellent balance of fat and lean meat, it melts in your mouth and can be enjoyed refreshingly.
