We carefully select high-quality seafood caught by local fishermen in the waters near Amakusa. We offer seasonal seafood such as sweet shrimp, turban shell, striped jack, and bonito tataki, depending on the time of year. The freshness of the ingredients gives them a firm texture and sweetness, making them a delightful treat for the palate.
Our skewers, luxuriously made with seasonal ingredients from Kumamoto Prefecture, feature a delicate and refined batter. We offer extravagant skewers that highlight the natural flavors of fresh seafood, such as sweet shrimp that can be eaten as sashimi, and seasonal vegetables sourced from various regions in Kumamoto. Each skewer is carefully prepared and can be enjoyed individually, as a platter, or in various course options.
Commonly known as 0 Shabu, this dish features fresh, high-grade horse sashimi from Kumamoto, served shabu-shabu style. The meat is sliced very thinly, similar to sashimi, so it is recommended to briefly dip it in kombu and bonito broth to avoid overcooking, and then enjoy it with a special ponzu sauce infused with yuzu. Due to the excellent balance of fat and lean meat, it melts in your mouth and can be enjoyed refreshingly.

We use the highest quality seaweed 'Shioya Ichiban' from the seaweed specialty store Fuga Maki in Kumamoto, produced in Kawachi Town, Nishi Ward, Kumamoto City. Please enjoy the seaweed, which is priced over 500 yen per sheet, at Kushikatsu Hide, chosen for its 'Nori' and 'Energy'.
At our store, we use only ingredients sourced from Kumamoto Prefecture, including seafood, vegetables, salt, sauces, rice, and seaweed.
