Wine often has no aroma or a weak aroma immediately after being uncorked, and the taste can also be weak and unbalanced. This is particularly true for high-end wines (priced at around 3,500 yen or more at our establishment; we rarely have ordinary wines). It is common for it to take 30 minutes to an hour for flavors and aromas to develop, and if the wine is closed again, it can take 2 to 5 or 6 years. In the worst cases, it may take about 10 years. (Of course, we do not serve such wines at our establishment; we store them until they open up.) For this reason, we recommend early uncorking and decanting. Additionally, if you make a reservation by phone, we can also uncork the wine in advance.
