This is Fire Pork from Saiki Farm in Kumamoto Prefecture. The pork, raised with a focus on health and without stress, is characterized by its delicate and tender texture, with a light and sweet fat that has no distinct pork odor.
Grilled Tosa Akaushi, which has a rich meat flavor, seasoned in a sukiyaki style. It pairs exceptionally well with the rich dragon's egg.
Slowly grilled at low temperature to lock in the umami of the lean meat.
