The Yusui Chicken, raised using the pure underground water from Yusui Town in Kagoshima and a unique blend of non-GMO feed, is committed to safety, security, and quality. Raised in a spacious and bright chicken coop without stress, these chickens benefit from the rich minerals and moisture of the spring water, enhancing their sweetness and umami, making them fresh enough to enjoy as sashimi. Additionally, strict hygiene management is implemented, and a processing method called 'soto-hagi' minimizes the risk of food poisoning. Locally operated, every step from raising the chickens to serving them is done with meticulous care, making it a trusted brand that maximizes the power of its ingredients.
Liver Sashimi: Made with carefully selected fresh Nagoya Cochin liver, prepared with thorough hygiene management and unique low-temperature cooking. It features a melt-in-your-mouth texture and a refined taste without any unpleasant odor. Heart Sashimi: Made with fresh heart parts of domestically raised chickens, meticulously processed and cooked by skilled artisans. The low-temperature cooking brings out tenderness and umami, offering a dish with no unpleasant odor, a chewy texture, and a rich flavor. This dish shines with a commitment to freshness and technique, presenting a different charm compared to liver.
Grilled chicken without skewers, cooked on a stone. First, the staff will demonstrate the cooking process and guide you on the best way to grill. After that, you can grill it to your liking, feeling like a yakitori chef! Enjoy a hot experience with all five senses together.
Daisen Chicken: A brand chicken from Tottori Prefecture, raised in the beautiful underground natural water and clear air of the Daisen foothills. Brand chicken refers to high-quality chicken with clear standards for breeding methods, feed, and breed. Daisen Chicken is fed antibiotic-free feed after 28 days of age and raised in free-range conditions for about 58 to 60 days, which is approximately one week longer than usual. It has an excellent balance of fat and flavor, offering a plump and juicy taste. Brand chicken: Brand chicken is high-quality chicken that enhances flavor and taste by carefully raising it with improved feed and rearing environments compared to typical broilers.
Tamaba Chicken: This is a local chicken raised with care in the rich natural environment of Kyoto and Hyogo, without any medication throughout its life, and free-range. It is raised slowly for about 90 days, nearly twice as long as typical broilers, with a feed primarily composed of grains. It features a firm texture and moderate elasticity, highlighting the natural umami and richness of the chicken. Even when cooked, the meat does not shrink, maintaining both juiciness and a satisfying bite, allowing for a deep flavor that expands with each chew. The unique aroma of local chicken and its refined, non-intrusive umami are also appealing, especially when cooked on a stone grill. This is chicken that we highly recommend for those seeking a high-quality taste.
Using a special stone known as 'the stone that emits the most far infrared rays in the world' from Ishiyaki Jidori Torikura, the chicken is slowly grilled to achieve an astonishingly fluffy and juicy finish. Customers can also adjust the grilling level themselves, providing a unique experience where they can become a yakitori craftsman.
Tosa coarse salt from Kochi Prefecture: Please enjoy it with chicken, said to be the best in Japan! Grated daikon with ponzu: Light and healthy! The refreshing taste is a staple for Japanese people! Torikura's special sweet sauce: A rich sauce packed with sweetness and umami! It pairs perfectly with juicy meats and offal!
