We have over 380 carefully selected wines chosen by our owner chef, who is also a sommelier and has learned the art of pairing wine with food from various regions of Italy. Our selection includes a variety of red, white, rosé, and sparkling wines from different parts of Italy, as well as standard and special lines of Champagne, and unique local wines and vintage wines from various regions of Italy. Our Japanese sake is of one type, the original label 'unico-co'. It was produced in collaboration with the owner of the members-only Japanese sake bar 'Chinju no Mori animism bar', which is located in the same Arakicho as our shop. This exquisite sake was created to pair with various types of sea urchin. We use Association No. 7 yeast. The rice is Yamada Nishiki sourced from a special contract farmer in Tottori Prefecture. The producer of Yamada Nishiki is Shinichiro Sugiyama, an organic farming expert in Tottori Prefecture. The rice is grown completely without pesticides. We challenge ourselves to improve the soil and adapt to the weather of the year, sometimes shifting the planting season by one or two months, which is something unheard of for traditional rice farmers, always striving for excellent rice production. We invite you to taste this superb Japanese sake, specially created for pairing with sea urchin.
