This is a chuhai made using straight, unfiltered juice extracted from whole yuzu grown in Marumura. By combining the fragrant yuzu juice with carefully selected barrel-aged shochu, we have created a rich and aromatic flavor.

Limited to weekends, 20 bowls made with plenty of Tosa Jiro chicken raised with love by Ms. Hiroko Shimazaki from Nankoku City, Kochi Prefecture. We added the umami and collagen of Tosa duck to the traditional chicken white soup and whipped it to create an even creamier chicken white soup. Please enjoy it with the separately prepared rare chashu, chicken ham, seasonal vegetables, and more. Premium chicken white soup soy sauce ramen / rare chashu / chicken ham / seasonal vegetables / boiled egg, menma, white leek / myoga pickled in Tosa / served with white rice.

We slowly simmer Tosa Jiro chicken from Tosa, high-sugar tomato puree from Akisai Happy Farm, and aromatic vegetables, blending them with a special sauce that concentrates the umami of shrimp and miso to create a fragrant and rich soup. This bowl is perfect for spring, topped with rare chashu, shrimp wontons, and seasonal spring vegetables delivered directly from Kochi.
Limited to 20 servings on weekdays. Period: April 1 to April 30. This dish luxuriously uses three types of brand chicken: Shimanto chicken, Tosa duck, and Bichu Kogen chicken. The Shimanto chicken is prepared with fresh ginger for a rich flavor as 'soboro', the steamed chicken is made moist with sesame oil and sun-dried salt, and the skin of the Tosa duck is grilled with locally sourced white leeks from Kochi Prefecture in a special sesame soy sauce, perfectly seasoned for rice. To finish, we added a hot spring egg from Yamazaki Farm in Nankoku City, known as 'yuzu tamago'. Enjoy the diverse flavors wrapped in aroma as you mix in the egg.
Limited to 20 servings on weekdays. Period: May 11 to May 31. 'The bonito from Kure is caught off the coast of Tosa and returned the same day, known as 'day-return bonito.' Moreover, it is caught one by one, making it delicious.' The bonito grilled with straw, a pride of Tanaka, the bonito sommelier from the renowned bonito town in Kochi Prefecture, is wrapped in Tosa style with thinly sliced garlic, shiso leaves, and green onions. The sushi rice is finished with yuzu vinegar for a refreshing taste.
