A classic of Edomae sushi that shines with luster. The 'Small Skin' and other shining fish most prominently reflect the taste of the restaurant. The exquisite finishing that matches the state of the fish, along with the delicate balance with the rice, is outstanding! This dish is a culmination of the sushi chef's exceptional skills.
Boiled, steamed, grilled. Carefully prepared anago that is fluffy and tender. We select large anago with thick flesh, simmer it, then steam it carefully, and finally grill the skin to a fragrant crisp, resulting in a superb dish. The rich special sauce enhances the deliciousness.
