After briefly dipping the whole chick in hot water, it is hung to dry for a full day to remove excess moisture. This process concentrates the meat's umami while keeping it juicy.

Our signature dish features large raw shrimp marinated in a special sauce. We use large raw shrimp that can be enjoyed even raw. They are soaked in a secret sauce based on five-year-aged Shaoxing wine. This dish offers a melt-in-your-mouth sweetness, rich miso flavor, and a light aroma of Shaoxing wine. One piece.
It takes two weeks to prepare. This is a recommended dish that you must try. We carefully select pork belly with the right balance of lean meat and fat, using a whole piece with the skin on. The pork belly is marinated for one week with a base of soy sauce and Shaoxing wine, along with more than ten types of spices. After marinating, it is dried for ten days. This dish pairs well with Shaoxing wine, full-bodied red wine, or shochu, and is highly recommended by our restaurant.
