Stick Anago refers to the eel species known as the black mud eel, not the common eel. It is called 'Stick Anago' in Oga because it takes on a stick-like shape when processed. Each piece is carefully dried by fisherman Nagayuu Sawaki from the Oga Peninsula in Akita. The catch is quite limited in Oga, making it a high-end ingredient that commands prices higher than tuna on a per gram basis. The roasted flesh has a delightful texture similar to shrimp or squid. Please give it a try at least once.

Furousen's three-year aged Yamahai special Junmai is deep and rich in flavor, with a good sharpness that enhances the umami when warmed. Sawaya Matsumoto's Junmai sake has a refreshing aroma and a slight sweetness followed by an irresistible spiciness. Tsuki no Katsura's Junmai sake uses 80% polished 'Iwai' sake rice, grown without pesticides or chemical fertilizers, resulting in abundant umami. Okubansai's Yamahai Junmai has a refreshing mouthfeel and a unique sharpness typical of Yamahai, with a pleasant aftertaste.
