The main chicken we use is “Kyoto Shichitani Red Chicken,” raised in Kameoka, Kyoto. We are also committed to using seasonal and organic ingredients from Kyoto, crafting a course menu that can only be enjoyed here. In Kyoto, at the banks of the Nanatani River in Kameoka, there is a spacious chicken coop where organic local chickens, raised without chemical fertilizers, possess rich natural flavors and aromas. The organic local chicken 'Kyoto Nanatani Red Chicken' raised by farmer Takashi Kato, who dedicated his life to yakitori, produces juicy meat that becomes more flavorful the more you chew. The meat is enhanced with TANGO Kinu Salt from Amino Town in Kyotango, which has been roasted multiple times to increase its umami.
