Kawaba Village, known for its long history of rice cultivation, is home to the Koshihikari rice 'Yuki Hotaka.' This rice is nurtured every year with great care, using mineral-rich natural water that springs from Mount Bukozan, one of Japan's 100 famous mountains, and meticulous management by the producers. Its existence is considered very precious, and it was traditionally consumed only by the villagers' relatives as a 'phantom rice' that is not distributed to the general public. Since 2004, eight rice growers have been allowed to present new rice to Their Majesties the Emperor and Empress at the Imperial Palace, which is also well-known. In recent years, its quality has been recognized as a significant achievement, having won consecutive gold awards at the 'National Rice and Taste Analysis Competition.'
At our restaurant, we use carefully selected Japanese beef, primarily from black-haired wagyu, sourced from across the country. The head chef personally visits and selects beef raised in regions with active livestock farming, ensuring safe and high-quality meat. The flavor is characterized by a fine texture, melting tenderly and releasing umami the moment it is cooked. It features a 'fluffy' melt-in-your-mouth quality of 'superior umami.' We serve it in various dishes such as shabu-shabu and sukiyaki.
Ginza Tsuru's shabu-shabu and sukiyaki are served at a temperature of 65°C to 70°C without boiling. By cooking at low temperatures, the umami of the meat is concentrated, allowing you to enjoy it 'fluffy' and tender. Additionally, the generation of scum is minimized, which is another feature. The vegetables are pre-grilled over binchotan charcoal, allowing you to enjoy them simply by dipping them in the soup. ~Shabu-shabu Soup~ We are particular about the temperature and boiling method, and the beef tail soup, made to maximize umami, can take over 12 hours to prepare. The clear soup increases in flavor over time and is so delicious that you will want to have seconds. ~Sukiyaki Sauce~ At Ginza Tsuru, we serve the sukiyaki sauce in a soup-like state so that it can be enjoyed at low temperatures. The sauce is made with carefully selected soy sauce, mirin, and sake, combined with dashi made from bonito and kelp, tailored to complement the wagyu.
