Due to supply conditions, this item may be out of stock. We use Tokachi beef from Hokkaido, simmering a whole beef tongue in red wine for about 4 hours and letting it rest overnight to concentrate the flavors. It is cut to a thickness similar to steak and served with a homemade demi-glace sauce combined with the stew broth for a special sauce. The beef tongue, simmered for 4 hours, is incredibly tender, and the moment you bite into it, the flavors burst forth. The remaining special sauce can be enjoyed even more when dipped with the baguette.
We offer Tokachi asparagus prepared using simple techniques: grilled, boiled, and butter-fried. Enjoy!
