A beer born as a crystallization of the brewer's dreams, passion, and beliefs. With a thorough commitment to ingredients and brewing methods, it pursues only deliciousness with a rich and complex flavor. You can enjoy the layered and expanding tastes, gentle bitterness, deep richness, subtle sweetness, and pleasant aroma.
The citrus used varies by season. In January, we use yuzu for the sour.
The aroma is very complex, featuring the scent of pesticide-free young sansho leaves and crushed sansho berries, along with the fragrance of root vegetables like burdock. The taste is very sharp with a clean aftertaste. It pairs perfectly with meat.
Based on Wenzhou mikan (mandarin), it has a refreshing and sweet mandarin aroma that spreads in the mouth when poured into a glass, with a soft acidity and a slight bitterness that leaves a pleasant impression.
We have about three types available every day, so please ask our staff! We incorporate many varieties, including local sake from Fukuoka and those from the Tohoku region, so feel free to inquire.
