A specialty of Sublime that fuses Nordic 'fermentation' culture with French culinary techniques. This rich and profound soup is created by fermenting mushrooms for at least 14 days at low temperatures. At the center, a soft onsen egg is hidden, allowing you to first enjoy the pure flavor of the soup, and then break the egg to experience a creamy change in taste. Enjoy a journey of flavors that offers two delightful experiences in one dish.

A luxurious Hungarian foie gras sandwiched in a beautifully toasted brioche. The ingredients and sauces inside change with the seasons, enveloping the flavors of the moment along with a hint of instant smoke. This dish, which appears with rising smoke, is truly a 'reward for adults' that stimulates all five senses. Be sure to try this hidden specialty of Ginza Sublime, quietly lurking on the back of the course menu.
