At our restaurant, we select A5 Yamagata Beef that is not overly fatty, and further age it for over one month in a dedicated refrigerator at a butcher shop. Our head chef meticulously prepares the exquisite Yamagata Beef, carefully selecting only the most delicious parts to serve.
One of the delicious aspects of meat dishes is the flavor of the fat. The meat we serve is displayed in a special case for you to see, and you can choose whether you prefer sirloin or fillet based on your mood that day. If you like fat, please choose sirloin; if you prefer lean meat or are watching your fat intake, please choose fillet.
Vegetables grown in the rich soil of Toyama, characterized by their 'vibrant colors' and 'strong flavors.' These truly delicious vegetables are cultivated by constantly engaging with both human factors such as 'soil, water, and fertilizer' and natural conditions like 'organisms, temperature, humidity, and weather' to find the best state for the vegetables to grow in the most delicious way.
Fresh fish arrives daily from Toyosu. Sometimes, we even have fish flown in directly from a Michelin three-star restaurant's supplier in Hokkaido to Ginza. We prepare seasonal fish in various ways, including grilled, sashimi, and sometimes fried. Next to the counter, there is a small aquarium where we have live abalone and live shrimp, ensuring top-quality ingredients are ready for you.
