We use carefully selected sweet potatoes from various regions of Japan, primarily centered around Kagoshima. The sweet potatoes, lovingly cultivated by our contracted farmers, are shipped directly from the production area after a maturation period of over 40 days. Ripening... Sweet potatoes can maximize their natural sweetness by being properly matured at a certain temperature rather than being consumed immediately after harvest. At Shimizu, we only use sweet potatoes that have been matured for over 40 days. Not just any sweet potato will do... Just like rice, there are many varieties of sweet potatoes. At Shimizu, we make sweets from baked sweet potatoes. The reason we go to such lengths is that we can maximize the natural sweetness of the sweet potatoes. In fact, by baking them, moisture evaporates, concentrating the flavor, and the sweetness increases with further heating. We do not add any extra flavors. To enjoy the taste of the sweet potatoes themselves, we use various textures of sweet potatoes, resulting in many delicious sweets from Shimizu. Steeping it in water at 80°C to 90°C for a slightly longer time brings out its characteristics well.
