In summer, we use wild ones, and in winter, we use softshell turtles from Lake Hamana, supplied by Hattori Suisan. The softshell turtles from Hattori Suisan have no odor at all and possess high-quality fat; as far as I know, they are the best in Japan. Reservations are required for two or more people, at least two days in advance. Appetizers, seasonal appetizers, sashimi, seasonal sashimi, grilled dishes, grilled softshell turtle, fried dishes, fried softshell turtle, hot pot dishes, softshell turtle hot pot, meals, softshell turtle porridge, desserts, seasonal desserts.

Available only in winter (from October 1 to March 31). Reservations must be made at least two days in advance. Includes appetizers, seasonal sashimi, grilled natural tiger pufferfish, stone-grilled pufferfish, grilled pufferfish milt, fried pufferfish, pufferfish hot pot, pufferfish chiri meal, pufferfish zosui, sweet dish, and seasonal dessert.
