What is Japan?: Japan’s dining scene is often described as a dialogue between seasons, craftsmanship, and regional identity. From sushi, tempura, and kaiseki to ramen, yakitori, and wagashi, menus tend to highlight clarity of flavor and careful presentation. Travelers may notice distinct local styles: Hokkaido’s seafood, Tohoku’s comfort stews, Tokyo’s soba and modern interpretations, Kansai’s okonomiyaki and kushikatsu, Shikoku’s udon, Kyushu’s tonkotsu ramen, and Okinawa’s island influences. Many venues emphasize dashi, fermented seasonings such as miso and soy sauce, and precise knife work. A tradition linked to tea ceremony hospitality is said to shape the understated service and attention to detail found in many dining rooms. Street-side counters, casual izakaya, and refined multicourse experiences coexist, encouraging spontaneous tastings and planned outings alike. Seasonal specials, chef’s selections, and collaborative pop-ups appear in various neighborhoods, suggesting a food culture that balances heritage with ongoing creativity.
What is Spanish?: Spanish cuisine brings together vibrant aromas, bold seasonings, and a relaxed approach to sharing. Menus often open with tapas and pintxos—small plates designed for sampling—ranging from marinated olives and croquetas to garlic-scented gambas al ajillo. Hearty rice dishes such as paella showcase saffron, seafood, and seasonal vegetables, while stews and cazuelas emphasize slow-simmered depth. Grilled meats and fish prepared a la plancha or over charcoal deliver a distinctive sear, balanced by salads and tomato-based gazpacho in warmer months. Cured specialties like jamón and a variety of regional cheeses highlight craftsmanship and terroir. Many dining rooms encourage a leisurely pace, inviting guests to pair courses with sherry, cava, or regional wines and to enjoy conversation as flavors unfold. Whether gathered at a lively bar or seated for a coursed meal, the experience favors variety, texture, and conviviality, offering many paths to explore tradition and contemporary flair.

We enjoyed our meal in a private room that was easy to converse in.
This season, which has suddenly turned cold, was perfect for the meal, and I was deeply moved by each dish, which retained the classics while incorporating originality here and there. It was an unparalleled happiness.
I feel I understand why I often hear that this is a place people wish to visit for a lifetime.
Chef Higashi's personality is very wonderful, and we had a delightful time. Thank you for the meal.
Thank you for securing the desired table for us, even though we only made a reservation for two. Thanks to you, we were able to have a leisurely conversation during our rare sister trip. All the tapas were delicious, and the marinated sardines, in particular, had just the right amount of vinegar, allowing us to enjoy them easily. We were also able to enjoy several types of sherry, which reminded us fondly of our trip to Spain. The atmosphere in the restaurant seemed very friendly to foreigners, so I would like to visit again next time with my American husband.

It is the night of the fifth day of the Kansai expedition. Here, we met up with Grandpa Hata and went to bbq in Kobe.
I thought it was one of the restaurants that I thought I was right in Kansai expedition. ☺️
It is also Manpai's favorite restaurant!
⭐️ taste 8 It was quite a hit. I'm not sure if I'd like to go back to this place again, but I would. I was shown a video of the wood burning and the reddish wood, what's the name of it, lol, and he said it was very key to the wood burning.
They use 2 tons of wood a month😳
⭐️ service9 It was pretty good the first time too. Thanks to Uncle Mann!
⭐️Ambiance 8 Even from the entrance
⭐️cosmos- I think it was around 30000 sorry I forgot
⭐️Direction 7 It was in places!
I think you should try it at least once!

Near the aquarium, you can enjoy innovative Okinawan cuisine. Every time I go, new dishes are presented, and I feel excited each time. They skillfully use local ingredients, allowing the individuality of the materials to shine. The meat grilled over a wood fire had a wonderful aroma and left a strong impression on me. There are also handmade non-alcoholic drinks, so you can fully enjoy the beverages as well. I felt the essence of tradition while having a unique experience that I have never had before, and I am satisfied.

The interior of the restaurant is stylish, and just sitting down makes you feel excited. First, a fragrant tea is served, which lifts your spirits right from the start of the course. The warm dish of potatoes and mushrooms highlights the umami of the broth and is very light to enjoy. The deer tartare captured my heart in one bite. I was impressed by the composition of the risotto made with rice from Nara, the smooth liver, saffron-colored noodles, and the crispy roasted taro. The strawberry parfait from Nara that I enjoyed at the bar also left a lasting impression, showcasing the skillful expression of the season.

The soup I had previously was excellent, so I revisited.
This time it was sardine soup. The soup contained everything from the head to the entrails, and was rich and uniquely delicious.
I also enjoyed the flavors of seasonal vegetables such as garland chrysanthemum and turnip, the venison, and the pasta, all of which were delicious. I would like to go back again.

Chef's attention to detail!
Let's go to a new restaurant from a friend! I was invited to go there!
The former chef of Echora is now independent,
The chef of Echora has opened a new restaurant, Aralde!
It is located between Honmachi and Awaza.
It has a gate and a very nice appearance.
Once you enter the store, you will feel the warmth of the wood and the warmth of the interior.
The aroma of firewood fills the store and it smells great~!
There is a counter in the front and tables in the back.
The spacious design makes you feel at home.
The tables and chairs are full of the chef's attention.
Only the 5,500 yen course is available.
One of the guests was allergic to shellfish, but the chef was willing to accommodate us.
We toasted with a glass of sidra!
Sidra is a specialty of the Basque region, and this was the last time it was served from the barrel!
We poured the sidra into the glasses with great gusto and let the aroma hit us!
After pouring, please drink in order without toasting!
The most delicious moment is not possible to drink if you are toasting!
If you drink it quickly, it will be very refreshing and aromatic.
The bubbles are crisp and stimulating!
It was a very delicious sake!
kutxa
Appeared in a side box!
When you open the lid, you will be excited at once!
Wood grilled bonito with tartar
Strawberry gazpacho
Senshu eggplant and Basque pork ham
Deep-fried firefly squid with smoked squid
All of the dishes were carefully prepared, and I can't wait to see what they have in store for us in the future!
The strawberry gazpacho was sour and delicious with the aroma of strawberries!
The eggplant and ham also went very well together!
They were four very delicious dishes!
Potage of green asparagus
It came in a black round shape bowl!
The green color is gentle, and the taste is gentle too!
The asparagus flavor was also very strong!
It's because it was carefully potaged!
Bread
Bread imported from Spain!
Wood-fired, so the aroma permeates the bread.
Soft and chewy.
Warm salad with white asparagus and scallops
The scallops are left rare, so you can enjoy both textures!
The white asparagus has been beautifully peeled and is easy to eat!
You may have never seen such beautiful asparagus before!
Today's fresh fish grilled over wood charcoal
Today's fish is a Chinu.
Maybe it's because it's grilled over wood, but this fluffiness is amazing!
It's like a soup with aserga and potatoes!
This soup is so delicious!
It's concentrated, filling, and comforting!
Wood-fired duck breast!
Of course, this one is also wood-fired!
Shredded pork leg ashore, served with honey and orange sauce!
The aroma of the wood smells wonderful every time!
The wood fire is also a good one, and the meat is soft and moist without losing any moisture!
The refreshing sauce will refresh you!
The menu said "pig's feet", so we all imagined it to be just as it was....
It's easy to eat, and the collagen-rich texture is a perfect combination!
Rice with bamboo shoots and scallions
It is served in a cocotte sized Staub!
Open it and you'll find rice with bamboo shoots and scallions!
It's nice to have something with a Japanese taste at the end of the meal!
Rice with crispy bamboo shoots and scallion soup stock!
How could it not be delicious?
Goshua!
It's a sweet from the Basque Country!
It's a sponge layered with custard!
It smells delicious, with a hint of rum.
It's a simple cake, but it was like taking a break with a cup of tea!
All of these dishes are prepared by the chef alone!
It's a slow course, but you can enjoy it and feel the attention to detail!
Many restaurants like this are not suitable for small children, right?
It's okay for little kids to wander around! It's not right to make customers leave because of that!
This restaurant has a diaper changing and nursing area!
Even if you have small children, you want to dine at a place like this, don't you?
Please feel free to ask the chef!
He will gladly agree to do so!
I'm sure it will change again when the season changes!
I want to go! My friend says, "I'd love to go!
Thank you for the food!

I went to the restaurant without having done any preparation before going, but I was able to enjoy very delicious food.
The restaurant is on the first floor of an apartment building. Here? The inside of the store is so stylish and sophisticated that it makes you think, "What is this place?
It looks like an interior store, and it's pretty, cool! The only dish available is the 13,000 yen omakase course!
Very exciting! ■Champagne
Everyone toasted with champagne!
The bubbles were fine and popping!
I was feeling a bit sick, so I thought I'd have a non-alcoholic drink. But...
But I'm glad I did! Champagne for everyone.
Pistachio marshmallows!
The first dish was the pistachio marshmallow. I can't predict!
Plump, like a baby's cheeks!
The pistachios are so soft and tender. ・Caviar and cauliflower - Smooth cauliflower cream.
The salty flavor of the caviar is a nice salty flavor. ・Gazpacho with hairy crab and salted tomatoes
The concentrated flavor of the crab and the sweetness of the tomatoes are amazing!
The amount of crab and the sweetness of the tomatoes are amazing! Sourness, sweetness, and umami!
Tartar of live horse mackerel with ario sauce and winter lettuce.
Awaji onion and sardine pie!
Kurobuta pork ton trotter and piquillo peppers Basque style
Finger foods, easy to crunch and eat.
How stylish!
Each and every one of these is outstandingly delicious, and I wonder if every detail has been calculated. I was like, [Cocktails].
...strawberry, gin, pepper, bay leaf smoked
Cocktails here.
This is part of the course, too!
Appeared in a test tube.
The smoked aroma was locked in until before it was served, so ahhh, it smells so good!
I wonder how many strawberries are in here? It's so dense!
Another was kumquat squash, this one was non-alcoholic.
I wonder if it is natural yeast?
The olive oil was so flavorful, which one was the star of the show? Which one is the star?
The olive oil was delicious.
Confit of squid in black and white!
The squid was so sweet and the black grains were squid ink, I think.
You can enjoy all the squid in this dish! Sudachi Soda
I love this!
Whenever I see it on the menu, I usually order it!
I love its fresh aroma and clean taste!
Char-grilled yerba mate with red andibs and anchovy espuma

And anchovies, right? Of course they are delicious!
Fritter of swordfish with green laver and snap pea soup
Fluffy flesh, light swordfish, green laver and snap pea soup!
What a Japanese combination!
I was relieved because we were at the end of the course!
Blancha and purple asparagus!
It's a young tuna fish!
It's got a strong flavor and firm elasticity!
The dish was a combination of the following: Kuri (chestnut) steak with spinach and seppu mushroom sauce!
The chestnut is the shoulder part of the beef, and the more you chew, the more delicious the sepp mushroom sauce is, mellow and yummy! Ya-ya!
The way this sauce was combined was outstandingly delicious!
Rice dish.
Magochi and asari arroz with cured ham
The rice soaked up the soup stock of the asari clam, so, you know...! It's delicious, isn't it? It's delicious, isn't it?

It was a delicious and enjoyable course with interesting combinations, beautiful appearance, and new discoveries~!
However, I felt that it must have taken a long time to conceive and prepare this dish before it was completed!
I would definitely like to visit this restaurant again!

The staff was polite and courteous.
The portions could be a bit large for two people, so it would be better to order a little less.
I appreciated the fact that we could take home the leftover dishes.
