A delicate and fruity dry sparkling wine made from overripe grapes harvested by hand. It is produced using the labor-intensive Champagne method, where the hand-picked grapes are immediately pressed using only air pressure. By minimizing contact with oxygen while preserving the must (the juice from destemmed and crushed grapes), it achieves a pure and rich fruit flavor inherent to the grapes. The winemaking process follows the traditional Champagne method, which is the most labor-intensive. After bottling the wine in juice form, yeast and sugar are added to initiate secondary fermentation in the bottle, enhancing the complexity of aroma and flavor. Origin: Asagiri Highlands, Shizuoka Prefecture and Makikyu, Yamanashi Prefecture. Variety: 100% Koshu grapes. Dosage: 2g/L. Harvest: Mid-October, hand-picked. Bottle aging: Over 2 years. This is a high-quality Japanese wine made exclusively from the Koshu grape variety, which is an indigenous Japanese variety. It is crafted following the teachings of the late Professor Dubourdieu, who was renowned for his research in white wine production as the head of the Bordeaux University Faculty of Oenology. The wine embodies the legacy he left behind, showcasing the delicate flavors and aromas of this unique Japanese variety. It has a complex, vibrant, fruity, and soft character with pure fruitiness, resulting in a vivid taste. It is highly regarded as the first dry white wine from Japan and represents the next generation of wines. Origin: Asagiri Highlands in Shizuoka Prefecture and Makikyu in Yamanashi Prefecture. Variety: 100% Koshu grapes. Harvest: Hand-picked around mid-October. Vinification: After fermenting only the first press juice in stainless steel tanks, it undergoes a minimum of 6 months of sur lie aging before being bottled in the spring of the following year in 750ml bottles.
