Our restaurant's cuisine is based on the kaiseki style of Japanese cuisine, presented in a meal format. By beautifully arranging the flow of the course on a single tray, you can enjoy the changing seasons and the highs and lows of flavors all at once. The most popular dish among our international guests is the 'Special Selection of Wagyu Beef Meal.' This memorable dish features A5 Wagyu sirloin sushi, crafted with a cooking technique that brings out the umami and delicate seasoning. The fragrant grilled eel is also a favorite. We are committed to handmade preparation, from selecting the dishes to carefully choosing the ingredients, including the garnishes and accompaniments, and we only offer high-quality set meals on our menu. Our concept is 'Providing unforgettable Japanese cuisine at the foot of the World Heritage Site, Mount Fuji.' A quiet location just a step off the main street. The dignified presence of the Japanese house and the Japanese garden reflecting the four seasons richly enhance the dining experience. In September 2024, the restaurant 'Shokujidokoro Kanade' opened, breathing new life into a historic building. Set in a valuable stage of a Japanese house over 50 years old and a magnificent Japanese garden, it is attracting attention as a Japanese restaurant where one can fully experience Japanese culture. Particularly in the Lake Kawaguchi area, where there are few authentic Japanese dining options, we are pursuing a special dish that delivers Japan's aesthetic sense and craftsmanship to both domestic and international guests.

With over 20 years dedicated to the path of Japanese cuisine, I have honed my skills in Kyoto and Shiga, possessing experience as a sushi chef and a license as a fugu (pufferfish) chef. After moving to Yamanashi, I have served as the head chef by Lake Kawaguchi since 2019, achieving a cooking rating of 4.6 on Rakuten Travel even during the COVID-19 pandemic. I am committed to handmade sashimi and garnishes, continuously refining the beauty and deliciousness of Japanese cuisine. 'At the foot of Mount Fuji, creating memorable Japanese dishes.' With this sentiment in my heart, I carefully craft each plate.
