Sushi Ikuta

Located in Katamachi, Kanazawa, “Sushi Ikuta” is a new sushi restaurant that opened in 2020. The interior exudes a mature atmosphere, designed with warm lighting and tones. It features L-shaped counter seating, allowing guests to enjoy conversations with the chef while dining.

I honed my sushi skills at Mitsukawa, a Michelin-starred restaurant in Higashi Chaya-gai. Here, he learned the attitude of a true craftsman and the power of imagination to create new dishes. When he was given the responsibility of cooking at Mitsukawa's second line restaurant, "Rekishi," Mr. Ikuta himself began to cook outside of the box.
