Shirokane-Takanawa, Tokyo Sushi with one Michelin star. The very fresh and kindly owner Matsuura is opening his own restaurant in 2019. We were invited by a regular to visit for the first time. Course Tsumami (snacks) Boiled octopus Sliced raw fish Sashimi Sashimi ・ Eel Grilled fish Rice with swordfish Bowl of rice Brown sugar ice cream with sake Nigiri Hand-rolled Negitoro Shinsei Yonotori Pairing Kinmedai snapper konbujime Horse Mackerel Aori Ika (bluefin squid) Pickled Red Meat Pickled Aka-meat Yellowtail Shako Shrimp Unotan Scallops After all, the ankimo and dried gourd rolls are too delicious. I thought it would be interesting to pair them with the Yonotori. Sake is good, and the overall cost is very reasonable.
