After training at Kitcho in Tokyo, Nishimura returned to his hometown Kyoto and opened his own restaurant in Gion in 1994. Nishimura's cuisine is authentic, yet not limited to simple tastes, which is its charm. His sense of style shines through in his casual use of tableware, making the entire meal a delightful experience.
