Originally from Osaka, after 12 years of training at Tsukiji's 'Sushi Kiyo', I worked for 6 years at 'Sushi Tan Kenzan' inside Takashimaya in Kyoto. With the opportunity to become independent, I opened 'Sushi Iwata' in December 2023, introducing a new sushi restaurant concept that offers sushi from the afternoon.
