This is a shop that is primarily based on introductions, but there are also opportunities for anyone to visit, making it easy to enter. It is impressive how the flavors of the ingredients stand out with minimal use of salt and sugar. Unusual vegetables and mushrooms appear one after another, and the delightful combinations are exciting. Fish and game also make an appearance, and the flow of dishes is pleasant as they are arranged according to the seasonal ingredients. During the ramen-only service, the soft-shelled turtle soup is rich and enjoyable even in its aftertaste. You can feel the efforts to reduce waste and the personality of the staff, which makes for a very satisfying experience.
